コエンザイムQ10 (CoQ10) は生体内において酸化型CoQ10 (ubiquinone) と還元型CoQ10 (ubiquinol) として存在し、健康維持のために重要な働きを担っている。CoQ10はエネルギー産生能と抗酸化作用が注目され、近年では健康食品等に幅広く利用されている。本研究では、食品に使用できる界面活性剤としてグリセリン脂肪酸エステルを用い、CoQ10 /γ-CD包接複合体と組み合わせたCoQ10の可溶化技術に関して報告する。 |

A functional substance, coenzyme Q10 (CoQ10) is key enzyme for energy production in the living body. However, it can be hard to extremely dissolve in water. We previously reported the water solubility enhancement of CoQ10 in combination with γ-cyclodextrin (γ-CD) complexation and some surfactants. In this study, the water solubility of CoQ10 was evaluated in combination with CoQ10/γ-CD inclusion complex and glycerin fatty acid esters with HLB 15-17 which surfactants can be used in food. |
