| 論文概要(英文) | Medium-chain triglyceride (MCT) having C6-C12 fatty acids is contained in such as coconut oil. After supplementation of MCT, absorbed C6-C12 fatty acids are not accumulated in adipose tissue but converted into ketone bodies which are easily used as energy sources in our bodies. Furthermore, the effects of MCT oil consumption on improving brain function have been reported because ketone bodies are also key substances as energy sources for the brain. On the other hand, α-cyclodextrin (αCD) is known as a dietary fiber and a prebiotic which exhibits various health benefits such as anti-obesity and improvement of bone strength. Therefore, the co-consumption of MCT oil and αCD is considered that enhances health benefits for elderly. αCD is known to form emulsions by encapsulating fatty acids in oils. The emulsion stabilities are enhanced in the presence of polysaccharides such as xanthan gum (XG), promising for applications as allergen-free dressings or bases for liquid foods. However, it is also known that the encapsulations of long-chain fatty acids (LCFAs) by αCD inhibit the absorptions of LCFAs due to the formations of stable complexes4. Therefore, in this study, we evaluated the solubilities of medium-chain fatty acids (MCFAs) in artificial intestinal fluid (FeSSIF) using the emulsions prepared from MCT oil, αCD and xanthan gum for energy supplementation and health promotion for elderly. The evaluation of solubility in FeSSIF is generally used to estimate gut absorbability. |
