Japanese white radish (a plant of the Brassicaceae family) is eaten daily in Japan and used as a condiment in the form of grated radish. It is popular because of its pungent taste. However, the main pungent component, 4-methylthio-3-butenyl isothiocyanate (MTBI), is rapidly decomposed after generation, resulting in the loss of the pungent taste and the release of an unpleasant odor. Furthermore, although MTBI has been reported to have health benefits such as antibacterial activity, there are no products on the market that maintain activity due to its instability. We previously reported that powderization of grated radish with α-cyclodextrin (Radish α-CD Powder, RAP) maintained MTBI stability and that RAP has anti-obesity effect.Therefore, in this study, we evaluated the inherent antibacterial properties of RAP containing MTBI stabilized with α-CD. |
