Hing (Asafoetida) is the dried latex (gum oleoresin) from the rhizome of Ferula plants. And it is used as a spice in vegetarian Indian cuisine. Hing contains various beneficial compounds such as ferulic acid ester derivatives and coumarin ester derivatives which show several activities such as antioxidant, antiviral, antifungal, cancer chemo-preventive, anti-diabetic, antispasmodic, hypotensive. Traditionally Hing is also used as a folk medicine for the treatment of various diseases, such as stomach aches, asthma, intestinal parasites, weak digestion and women’s health. Although, Hing has been reported to have various health benefits, its unpleasant odor caused by sulfur compounds and low absorbability due to its hydrophobicity are problems for utilization as a dietary supplement. Cyclodextrin (CD) is widely used as an additive in health foods and pharmaceuticals, because it has the inclusion property to hydrophobic components lead to the effect of reducing unfavorable taste and odor, increasing water solubility and absorbability of the hydrophobic components. Therefore, in this study, improvement of odor and gut absorbability of Hing by CD were examined. |
